Dark Chocolate dipped Honeycomb

My favourite chocolate bar but for adults

Can't beat fresh honeycomb dipped in contrasting dark chocolate. I'm quite partial to a sprinkling of sea salt too!

Ingredients

200g caster sugar

5 tbsp runny honey

2 tsp bicarbonate of soda

150g 70% dark chocolate, to dip

Prepare a large baking tray lined with baking parchment. In a saucepan, combine the sugar and honey. Place over medium heat until bubbling and a golden brown. This should take 3-5 minutes from bubbling, don't take it too far! 

Take off the heat and add in the bicarb. Very quickly whisk together and pour out onto the prepared baking tray. Leave to cool. Leave it completely undisturbed so you don't knock any air out. 

After about 30 minutes, it should be set. Break into bitesize chunks. Melt your dark chocolate. Dip in your pieces of honeycomb and leave to set on a piece of baking paper. Store in an airtight container to make sure they don't get sticky.
