Hot Cross Bun French Toast
Use up those slightly stale hot cross buns this Easter & transform them into an indulgent brekkie This is so delicious, I'd recommend making it whether they're stale or not!
Ingredients - serves two
1 egg
80ml whole milk
1/2 tsp vanilla extract
Pinch of ground cinnamon
Pinch of salt
2 x hot cross buns (fresh or a little stale)
Butter, for frying
Bacon & Maple syrup to serve
Method
Whisk together the egg, milk, vanilla, cinnamon and salt in a shallow dish until combined. Slice the hot cross buns in half and place into the mixture. Let soak for 3-4 minutes (depending on how stale your buns are) before flipping over and soaking the other side.
Heat a frying pan over medium heat. Add in a generous knob of butter. Once sizzling, place the soaked hot cross buns into the pan & cook for 5 minutes until golden. Flip them over and cook for another 5 minutes or until cooked through.
Serve warm with crispy bacon & maple syrup. Enjoy!
