Strawberry Jam Cornflake Pie
Flaky pastry, fruity strawberry jam, sweet sugary cornflakes and a soft whipped cream. A slice that tastes like a big bowl of fruity cereal and milk. She’s fancy with her frilly piping but still a wholesome and humble pie. I made this in my extra deep 9-inch pie dish because I wanted her to be T-H-I-C-K. She’s exactly what I envisioned. And my big fat slice of pie craving has well and truly been satisfied.
Butternut Squash, Mushroom & Gorgonzola Quiche
I grew up eating quiche. It evokes light summer dinners in the garden and a surprise piece nestled in my lunch box. My mum can whip one up in no time; a talent I'm yet to master.
This is my grown-up take, full of fresh rosemary and mushrooms. You can switch out the rosemary to sage for my favourite butternut squash herb pairing. I always hope it will last us a few meals but it seems to be devoured within a day or two!
Traditional Cornish Pasties
Holidays by the sea, a pick me up after work, a trusty warm and delicious lunch when options are lacking - The humble Cornish Pasty.
Plum Galettes with Honey Chamomile Cream
This is the perfect dessert recipe as the season slowly shifts into Autumn and you’re ready to cosy up indoors. You can use any seasonal fruit you have around but plums are one of my favourites. Paired with a softly whipped chamomile infused honey cream, they make an ideal no-fuss autumnal treat.
Hazelnut, Caramel & Whisky Ganache Tart
All good things come to those who wait! If you’re looking for a weekend baking project or an indulgent dessert to impress your guests, this is it. Tender chocolate pastry, salted caramel, roasted hazelnuts and a whisky ganache; heaven! Although a little complicated, it’s definitely worth making all the elements. Enjoy!
Slovenia - Kremna Rezina
This deliciously creamy pastry originates from Lake Bled in Slovenia. It's a pretty straight forward recipe but does require quite a few steps and some forethought as it needs time to set in the fridge. Similar pastries are eaten around the world. It particularly reminds me of a vanilla slice in the UK, which is one of my favourites. Two layers of crisp, buttery pastry filled with a set vanilla custard and fresh cream.
