Blackberry & Maple Pear No-Churn Ice Cream Profiteroles
Just because summer seems to have been here one day and gone the next, doesn’t mean ice cream season has to end so suddenly. I feel like everyone has been making this simple no-churn ice cream this summer and I understand why. It’s light, creamy, really easy to make and doesn’t require an ice cream machine. As much as I’d love one, my tiny flat isn’t very accommodating for my kitchen obsessions.
Fig, Brown Butter & Lemon Financier Cake
Fig season is my absolute favourite season for fruit and veg. They’re beautiful, soft, sweet, delicate and the perfect hues of purple and pink. I really think they’re a thing of beauty. Unfortunately for me, fig season is extremely short. So I try to eat them as much as possible while they’re around.
Herby, Roasted Garlic Scones
I dreamt of a savoury scone, packed full of herbs & caramelised roasted garlic with just a touch of sweetness. So I immediately went into my kitchen and conjured these up. Two batches and a couple of tweaks later and they're here.
Super flaky, buttery and full of chives, dill & rosemary. Chuck in a whole bulb of roasted garlic & they're perfect.
Butternut Squash, Mushroom & Gorgonzola Quiche
I grew up eating quiche. It evokes light summer dinners in the garden and a surprise piece nestled in my lunch box. My mum can whip one up in no time; a talent I'm yet to master.
This is my grown-up take, full of fresh rosemary and mushrooms. You can switch out the rosemary to sage for my favourite butternut squash herb pairing. I always hope it will last us a few meals but it seems to be devoured within a day or two!
Apricot, Honey & White Chocolate Choux Buns
These are like little morsels of sunshine. Zingy Apricot compote and smooth, vanilla-speckled honey and white chocolate whipped ganache. These flavours coupled with a crunchy choux bun make for a perfect bite.
Black Forest Brownies
I've wanted to make a decadent tray of brownies for weeks. After having a look back through my reels and seeing my black forest cake, I knew that was the flavour I wanted to go with.
I'm still yet to find my 'perfect' brownie recipe; but I decided to try Baran Bakeries recipe and it didn't disappoint. They're the perfect mixture of cakey and fudgy, and probably one of the easiest brownie recipes I've made. Such a satisfying bake.
I then whipped up some mascarpone cream and topped it with vibrant cherry compote & chocolate.
