Sesame Sour Cream & Apple Cake
This has become my new favourite snack cake. A sour cream sponge made with tahini and toasted sesame seeds, that has a spiced sugar running through the middle and tart apples sitting on top. It’s then finished off with a maple tahini glaze that gets poured over the surface while the cake is still hot, so that it rests into all of its nooks and crannies. It’s moist and fruity but a little savoury from the sesame too.
All I kept thinking while eating my first warm slice was, ‘when can I make this again?’
Chocolate Chunk Espresso Muffins
When I dream of chocolate muffins, these are what I dream of. A moist and tender sour cream batter with big chunks of melted dark and milk chocolate. All nestled under a blanket of salty, crisp chocolate streusel and sweet coffee mascarpone cream. I think they're quite beautiful with their rough rocky surface and different shades of cocoa. My perfect chocolate muffin.
Herby, Roasted Garlic Scones
I dreamt of a savoury scone, packed full of herbs & caramelised roasted garlic with just a touch of sweetness. So I immediately went into my kitchen and conjured these up. Two batches and a couple of tweaks later and they're here.
Super flaky, buttery and full of chives, dill & rosemary. Chuck in a whole bulb of roasted garlic & they're perfect.
Black Forest Brownies
I've wanted to make a decadent tray of brownies for weeks. After having a look back through my reels and seeing my black forest cake, I knew that was the flavour I wanted to go with.
I'm still yet to find my 'perfect' brownie recipe; but I decided to try Baran Bakeries recipe and it didn't disappoint. They're the perfect mixture of cakey and fudgy, and probably one of the easiest brownie recipes I've made. Such a satisfying bake.
I then whipped up some mascarpone cream and topped it with vibrant cherry compote & chocolate.

Espresso, Brown Butter & Chocolate Chip Banana Bread
I love banana bread as it is; but I love it even more when its warm from the oven, packed full of coffee and gooey chocolate chips. I’ve also chucked in some brown butter to add depth of flavour. The result is a beautifully golden loaf that’s humble in its rustic appearance with a light, moist slice. The recipe comes together quickly and easily without the need for a stand mixer. So if you have any spotty ripe bananas that need using; this recipes for you.
Millionaires Shortbread
These are a real nostalgic treat for me. I’ve eaten them growing up at birthday parties, alongside a warming coffee as an adult and now I’m showing you how to make them at home! As with most bakes, homemade just tastes better. Using good quality ingredients, especially chocolate, make a world of difference here. Although these do have quite a few components to build up the layers, they’re all quite easy recipes to follow. So knock up a batch for your next coffee date and enjoy!
