Tiramisu glasses
One of my absolute favourites! There's something about Tiramisu that is utterly irresistible and so moreish. A mix of rich mascarpone cream, cocoa and boozy espresso soaked biscuits creates the perfect dessert. Easy to prepare, no baking and great for having guests over for dinner Using @allpressespressouk coffee beans for a bangin' flavaaaaa!
Ingredients: Makes 3 large glasses or 6 small
1 packet of savoiardi biscuits
8 shots of espresso
8 tbsp rum
2 eggs
3 tbsp sugar
250g mascarpone
200ml double cream
1 tsp vanilla extract
Cocoa powder, to dust
Method
Separate the yolks and whites in two different bowls. Whisk the egg yolks with the sugar until pale. Whisk in the mascarpone and vanilla until smooth. In a separate bowl, whisk the cream to soft peaks & fold it through the yolks. Whisk the egg whites until stiff and fold through the cream mixture.
Mix the espresso with the rum in a shallow wide bowl. Break your biscuits in half and soak in the espresso for a few seconds on each side (enough to soak them but not too long that they go soggy)
Layer the soaked biscuits in the bottom of your serving glasses followed by a layer of mascarpone cream. Dust a layer of cocoa powder and repeat the biscuit and cream layers again, finishing with a final dusting of cocoa powder.
Refridgerate for at least a few hours. Can be made the day before.
