I love adding a twist to classic recipes, keeping their comforting core but bringing in some new textures and flavours. I always try to cook with the seasons too, so right now is the perfect time to use winter citrus, apples and pears.
St. Patrick Day Choux Buns
Crisp choux buns filled with a silky smooth caramel sauce & a decadent whipped chocolate ganache. Both the caramel & the ganache are laden with Irish Cream in celebration of St Paddy's Day honestly, SO GOOD!

A large crisp choux pastry filled with indulgent vanilla pastry cream. I decided to add some compote into the bottom, which isn’t traditional but was very delicious!
Egypt- Om Ali
This delicious Middle Eastern pudding is really growing on me. At first, I was surprised at the lack of sweetness. Since it uses condensed milk; I thought it was going to be overpowering. But no. It has these lovely savoury moments in amongst delicious mellow Filo Pastry, Raisins, Nuts & Coconut. Let me know if you give it a go!
Tiramisu glasses
There's something about Tiramisu that is utterly irresistible and so moreish. A mix of rich mascarpone cream, cocoa and boozy espresso soaked biscuits creates the perfect dessert.
