Iceland -Kleinur

Kleinur

Icelandic doughnuts, eaten in practically every bakery. Super easy and quick to make when you need that doughnut fix!

Ingredients - makes 20 Kleinur

500g plain flour

175g sugar

1 tsp baking powder

1 tsp bicarbonate of Soda

1/2 tsp salt

1 tsp freshly ground cardamom

50g unsalted butter, cold

250ml kefir

1 egg

1 tsp vanilla extract

Oil for frying 

Method

Combine flour, sugar, baking powder, bicarb of soda, salt and cardamom together in a bowl. Rub in the butter using your fingertips until it resembles breadcrumbs. Add in the egg, kefir and vanilla and mix into a dough. Knead on a floured surface for 5 minutes until smooth. Wrap in clingfilm and refridgerate for 30 minutes.

Roll the dough out on a floured surface until 1/4 inch thick. Cut into large diamonds. Cut a slit through the centre of each (not cutting the diamond fully in half) and pull the bottom triangle under and through the slit. Place to one side until ready to fry. (These can be frozen at this point.) 

Heat a saucepan with vegetable oil at least a few inches deep. Heat until it reaches 180C. Fry the doughnuts for 3-4 minutes each side and drain on kitchen towel. Dust with icing sugar and enjoy fresh!
