Lemon Poppyseed Crullers
Sometimes all you need is a fresh doughnut, but sometimes you just don’t have the time or patience to make them. There’s making the dough, leaving it to rise, rolling, cutting and then leaving them to prove again. Here’s where the Cruller comes in: choux paste that’s fried to a deep golden before being dunked in a thin lemony glaze. Top with a sprinkling of poppyseeds and fresh lemon zest and they’re irresistible.
Canada - Nanaimo Bars
A chocolate, coconut and biscuit base, custard buttercream middle layer, all finished with a dark indulgent chocolate topping. I great snack to make at the weekend for an afternoon pick me up during the week.

These delightfully soft buns are scented with lemon & filled with a sweetened fresh raspberry cream. I've topped mine off with some chopped pistachios as they match so well with raspberries.

I decided to go the full hog and make Filo Pastry for these crisp, sweet & indulgent Pistachio Baklava. Not for the faint-hearted, you'll be hand rolling 28 large sheets of Filo for this. I love to put a film on to keep me company while I get going.
