Slovenia - Kremna Rezina
This deliciously creamy pastry originates from Lake Bled in Slovenia. It's a pretty straight forward recipe but does require quite a few steps and some forethought as it needs time to set in the fridge. Similar pastries are eaten around the world. It particularly reminds me of a vanilla slice in the UK, which is one of my favourites. Two layers of crisp, buttery pastry filled with a set vanilla custard and fresh cream.
Canada - Nanaimo Bars
A chocolate, coconut and biscuit base, custard buttercream middle layer, all finished with a dark indulgent chocolate topping. I great snack to make at the weekend for an afternoon pick me up during the week.
Austria - Linzer Torte
This is one I'll definitely be making again! So delicious. A perfect short and crumbly hazelnut pastry spiced with cinnamon, ginger and lemon. Filled with raspberry jam and topped with demerara sugar for that extra crunch
Black Forest Cake
I found it very difficult to let go of my perfectionism and create this rustic looking cake! I'm learning to see the beauty in the organic folds of the cream and messy cherry jam spilling over the edges.
Italy - Maritozzo
These delightfully soft buns are scented with lemon & filled with a sweetened fresh raspberry cream. I've topped mine off with some chopped pistachios as they match so well with raspberries.
Australia - Lamingtons
I've never had a proper Lamington so I hope I got them right. I decided to add a raspberry centre for more flavour and just to make it a bit more interesting to make. I did not enjoy dipping these at all, just be ready to have some patience
