
Thailand - Mango Sticky Rice
This week for ‘Baking around the world’ we’re in Thailand! I get excited every time I get to make something from a country so vastly different from the one I grew up in. It often means that their desserts are vastly different too. If you have ripe mangoes available, this is a perfect fresh dessert. It’s also an absolute breeze to make!

Hazelnut, Caramel & Whisky Ganache Tart
All good things come to those who wait! If you’re looking for a weekend baking project or an indulgent dessert to impress your guests, this is it. Tender chocolate pastry, salted caramel, roasted hazelnuts and a whisky ganache; heaven! Although a little complicated, it’s definitely worth making all the elements. Enjoy!

Slovenia - Kremna Rezina
This deliciously creamy pastry originates from Lake Bled in Slovenia. It's a pretty straight forward recipe but does require quite a few steps and some forethought as it needs time to set in the fridge. Similar pastries are eaten around the world. It particularly reminds me of a vanilla slice in the UK, which is one of my favourites. Two layers of crisp, buttery pastry filled with a set vanilla custard and fresh cream.

Chilli Oil, Tomato, Mozzarella & Olive Focaccia
Few things beat a fresh batch of Focaccia. I adore the ease of this bread. Its minimal effort, maximum reward. Instead of using olive oil in this recipe to dimple and prove the dough, I’ve gone for a punchy chilli oil. Accompanied by fresh cherry tomatoes, mozzarella, thinly sliced red onion and green olives; this is my ultimate snack.

Strawberry & Rhubarb Muffins
Its been a while since I baked something comforting and simple. I had some frozen Rhubarb to use up and thought it was the perfect excuse to make some muffins! Moist, light and topped with a ginger crumb; these will suit any seasonal fruit you have knocking around.

Miso Caramel & Dark Chocolate Viennese Whirls
Viennese Whirls are up there with some of my favourite biscuits. I find the tender, buttery crumb so delicious and I can never stop going back for more! Since I love them so much, I thought; why not add an adult twist? A rich dark chocolate ganache pairs so well with salted caramel. By adding in Miso paste into the caramel, it adds a salty edge without adding extra salt. Make sure to use some good-quality chocolate for this recipe and enjoy!
