Finland - Mustikkapiirakka

I asked you guys which country you'd like to see next and you voted for Finland! This traditional Finiish blueberry pie is our next stop around the world. 

With a cake-like base and a sour cream cheesecake filling, this easy dessert is light and not too sweet. This will definately be something I make again!

Ingredients

125g unsalted butter, room temperature

80g caster sugar

1 tsp vanilla extract 

1 large egg

130g plain flour

1 tsp baking powder

Pinch of salt

Filling:

200g full-fat sour cream

1 large egg

50g caster sugar

150g blueberries (frozen or fresh)

Preheat your oven to 175C. Butter an 8inch tart dish with a removable base, and lightly dust with flour.

Pastry base: cream the butter and sugar together until fluffy. Add in egg. Add in flour, baking powder and salt. Mix until you have a thick cake-like mix. Using a spoon, spread the mix over the base and sides of the tart dish. Set aside.

Filling: whisk the sour cream, egg and sugar together. Pour half into the tart tin and spread in an even layer. Add the blueberries over the top before topping with the remaining filling. 

Bake for 30-40 minutes or until the edges are golden and the middle has a slight wobble. Leave to cool for 15 minutes before demoulding from the tin. Serve at room temperature or cold.
